A direct pressing is carried out to refine the purity of the fruit. Fermentation is carried out at low temperature between 14°and 15°C with regular and constant temperature control.

20% of the final blend is fermented in French oak barrels .

The entire blend is aged on lees for 6 months to reveal the aromatic notes and volume in the mouth.
